1800’s “farm” Oatmeal cookies

2 cups brown sugar “packed”
1 cup lard
1/2 cup buttermilk
1 tsp real vanilla

4 cups quick oats, or

3 cup quick and one of regular

1,3/4 cup all purpose flour
1 tsp baking soda
3/4 tsp salt

heat oven to 375

Let lard soften, and mix with brown suger, vanilla and buttermilk.
then add other ingredients

Make into 1,1/2 inch balls and place on ungreased cookie sheet.
flatten with metal spatula or bottom of glass dipped in water.

Bake untill golden brown, about 8-10 min.

This is the important part !

Immediatly remove from cookie sheet, do not cool on wire rack but lay on foil on counter, fast cooling removes moisture.

As soon as cookies are ALMOST cool place on plate and cover with plastic wrap , then when fully cool seal in container, except for the ones you need to gobble right away.

After a few hours sealed or fully covered the moisture will equalize between all the cookies and they will be moist and yummy.

possibly leave a few out to get hard, for dunking in some good organic Guatemalan roast, with real cream !!!

If your cookies get hard from being out on the table and in the unlikley event there are any left, place in sealed container with a piece of fresh bread overnaght, the cookies will absorb the moisture from the bread and be soft again. You can also place of piece couple of fresh apple slices in the container and the moisture along with the apple essence will enter your cookies.
